Frequently Asked Questions

What makes the process of freeze-drying better?

Freeze-drying is an advanced method of drying using very low temperatures to preserve nutritional value and create high-quality, long-term storage food products. In addition to preserving the product's structure, appearance and taste, freeze-drying is the most effective at retaining antioxidants including flavonoids and anthocyanins. Up to 97% of nutrients are kept using this method in comparison to about 60% or less in other methods of preservation.

Freeze-dried foods have a much longer shelf life and do not need to be rotated like other foods.

Freeze-dried foods are perfect for home storage, emergency use, camping, and hiking! Freeze-dried food are also commonly used for survival applications such as space exploration and military rations.

How long will they last in their packaging?

Unopened, these cherries will last up to one year. Keep your package out of extreme temperatures and direct light.

Freeze-dried cherries are crunchy. To keep them that way, reseal the bag when not eating. Contents will absorb moisture from the air and become sticky. They will still be good to eat but will not last as long as a cherry without moisture.  If it gets sticky it's best to be used within 24 hrs.

Where will you ship to?

  • Holiday Biscotti

    (Note: Biscotti is baked twice)

    350 degrees F

    2 Cups All-purpose Flour
    1 ½ Tsps Baking Powder
    ¾ Cup White Sugar
    ½ Cup (1 Stick) Butter
1 Tsp Lemon Zest (or ½ Tsp Lemon Extract)
    ¼ Tsp Salt
    2 Large Eggs
¾ Cup Pistachios, coarsely chopped (or almond slices or chopped pecans)
1.5 oz bag (about 2 cups) Freeze Dried Montmorency Cherries
1 1/3 Cup White Chocolate Chips – DIVIDED
½ Tsp Vegetable or Canola Oil

    1. Combine butter and white sugar in a large mixing bowl and mix using a mixer until combined. Add lemon zest and eggs and continue mixing.

    2. Add flour, salt and baking powder until combined.

    3. Add pistachios, 1 cup of white chocolate chips and cherries and continue mixing (the cherries will be broken in crumble but that’s what you want).

    4. Divide the dough into 2 balls and then form the balls into 2 logs about 12-14 inches long. Note that the dough is somewhat sticky!

    5. Line a large baking sheet with parchment paper and place the logs on the baking sheet. Lightly flatten the top of each log with the palm of your hand.

    6. Bake in a 350 F preheated oven for 40 min. Remove from oven and let cool for about 15-20 min (no more then 20 min). Place the logs onto a cutting board and using a serrated knife, cut each log on a diagonal using a sawing motion
into ½ to ¾ inch thick slices.

    7. Arrange the biscotti, cut side down on the same parchment lined baking sheet (reuse the parchment paper too).

    8. Bake the biscotti a second time at 350 degrees for about 15 min (until they are a pale
golden brown). Place biscotti onto a cooling rack and cool completely.

    9. Melt the remaining 1/3 cup of white chocolate chips with the ½ tsp of oil in a microwave safe bowl stirring well every 30 seconds (or you can use a double boiler for this step).

    10. To decorate, put the melted chocolate in a sandwich sized
zip lock bag and cut the tip off one corner then drizzle the biscotti and
sprinkle with red or green decorating sugar. Alternatively you can dip one side of each biscotti into the melted white chocolate and sprinkle with red or green decorating sugar (you may need to make extra melted white chocolate if you do this).

    NOTE:
I don’t often have pistachios but other nuts work fine. However, the green
pistachios with the red cherries give the biscotti a
    CHERRY GOOD HOLIDAY LOOK.
